For Kababs:
Coarsely chop green peas using an electric or hand chopper. Transfer to a mixing bowl. - 2

Mix in semolina, rice flour, and finely chopped green chilies.

Add all the spices and crushed ajwain. Add 3 tbsp water and mix well with hands to form a soft mixture.

Cover and rest for 15-20 minutes until the semolina and rice flour absorb the water. Knead the rested mixture.

Grease hands with oil and shape into kababs.

Heat oil in a pan on low flame. Fry the kababs for 4-5 minutes on each side until golden brown.

Drain excess oil on a kitchen towel and serve hot with green chutney.

For Chutney:
• Blend all chutney ingredients to a smooth paste. Adjust salt and lemon juice as needed.
