Ingredients

25 minutes
Makes 20 vadas
  1. 1/2 cupmakai no lot (yellow maize flour)
  2. 1/4 cupjowar flour
  3. 1/4 cupwhole wheat flour
  4. 2 tbspsemolina (thin variety)
  5. 1/4 cupbajri flour
  6. 1/2 cupwashed & chopped methi leaves
  7. 2 tbspsour curds
  8. 1 tspgarlic paste / chopped fresh green garlic
  9. 1 tbspsesame seeds
  10. 1 tspred chilli powder
  11. 1/2 tspturmeric powder
  12. 1 tbspgreen chilli - ginger paste
  13. 1 tbspjaggery, finely chopped
  14. 1/4 tspcooking soda
  15. Salt to taste
  16. 2 tspoil for moin + for frying

    Assemble all the flours together.

    Add chopped methi leaves & dry spices. Add sour curds,oil & salt. Add green chilli - ginger - garlic paste & jaggery. Mix very well using finger tips. Add water slowly to make a soft dough.Cover & rest the dough for a minimum of 30 minutes.

    Now make equal size portions from it.Wet your hands & take 1 portion in your palm. Using the other hand, press it with your fingertips in small discs.The discs are supposed to be a little thick. Make all the discs the same way.

    Heat oil in a pan. Add a few vadas (discs) at a time & deep fry them till golden brown in colour. (When you put the discs in hot oil, the flame has to be high, then lower the flame to slow, so the vadas get fried properly from inside also).Fry all the vadas the same way. Serve them with tea or fresh curds or store them in an airtight container when cooled. These vadas stay fresh for 2 days at room temperature.
