Ingredients

2-4 servings
  • 2 tablespoonoil
  • 4Flour or corn tortillas
  • 2 ccaned vegetarian black Beans, strained
  • 1/2 ccaned California black olives, sliced
  • 1 cred onion, finely chopped
  • 1 tbspgreen chili,, finely chopped
  • 1/2 tablespooncumin powder
  • 1/2 tablespoonchili powder/as per taste
  • 1/2 tspgarlic minced (optional)
  • 1 tspginger paste
  • 12 ozcan Mexican-Inspired Roasted Jalapeno Enchilada Sauce
  • 2 cor more Mexican Habanero cheese/your choice
  • 1/2 cparsley/basil/cilantro chopped
  • Salt to taste
  • Brunch, Dinner

    Make a checklist. Keep all ingredients within reach.

    Make a checklist. Keep all ingredients within reach

    Take cumin seeds chopped onion, green chili, ginger, garlic paste in a bowl. Add chili powder, cumin powder. Add strained black beans to it, mash. Beans mixture is ready Transfer the bean mixture to a bowl. Add cilantro. Add the shredded cheese. Salt to taste. - Mix them all in the bowl. Filling is ready.

    Place ¾ c veggie cheese mixture on the tortilla with a spatula Top with a 2tbsp sliced balce olves. Have some more cheese to your heart’s desire. I topped with 2tbsp cheese. Fold the tortilla, fold. Place the folded Enchiladas on a greased skillet.

    Pour the sauce on the top of the enchiladas. Then add the cheese as you feel like I like a lot of cheese so I use about a cup cheese. Place the skillet in the preheated oven 350F

    . Bake at 350 for 30 minutes or until the cheese is melted then serve, Lift with a spatula, place on a serving bowl with the sauce. Top with some more cheese. Place in a micowave to melt the cheese. Then serve. Share and enjoy the tasty spicy cheesy enchilladas
