Filling in this recipe is spicy hot blackbean, olives, chili, onion and cheese. Used the store bought enchillada sauce just as Beverly did. Sauce is equally spicy tomato sauce. Take cumin seeds chopped onion, green chili, ginger, garlic paste in a bowl. Add chili powder, cumin powder. Add strained black beans to it, mash. Beans mixture is ready Transfer the bean mixture to a bowl. Add cilantro. Add the shredded cheese. Salt to taste. - Mix them all in the bowl. Filling is ready.

Place ¾ c veggie cheese mixture on the tortilla with a spatula Top with a 2tbsp sliced balce olves. Have some more cheese to your heart’s desire. I topped with 2tbsp cheese. Fold the tortilla, fold. Place the folded Enchiladas on a greased skillet.

Pour the sauce on the top of the enchiladas. Then add the cheese as you feel like I like a lot of cheese so I use about a cup cheese. Place the skillet in the preheated oven 350F

. Bake at 350 for 30 minutes or until the cheese is melted then serve, Lift with a spatula, place on a serving bowl with the sauce. Top with some more cheese. Place in a micowave to melt the cheese. Then serve. Share and enjoy the tasty spicy cheesy enchilladas
