Ingredients

  1. 6chicken breasts, cut into strips
  2. 24wooden skewers (about 4/chicken breast)
  3. Marinade
  4. 1/2 cupunsalted chunky peanut butter
  5. 1⁄2 cup olive oil
  6. 1⁄4 cup white wine vinegar
  7. 1⁄4 cup tamari (dark soy sauce)
  8. 1⁄4 cup lemon juice
  9. 4garlic cloves, minced
  10. 8fresh cilantro stems, shredded
  11. 1 teaspoonred pepper flakes
  12. 2 teaspoonsginger, shredded

Cooking Instructions

    Clean chicken breasts of veins and trim excess fat.

    Cut each breast into 4 strips.

  3. 3

    Blend all Marinade ingredients in a blender until the consistency of paste.

    Marinade chicken breast strips in refrigerator at least for 2 hours and ideally overnight.

    Soak wooden skewers in cold water for 15 minutes before grilling.

    Thread skewers through marinated chicken strips.

  7. 7

    Set grill to medium heat and warm up.

  8. 8

    Grill on both sides until the chicken is golden and inside temperature is at 165°F.

    Serve as appetizers or with steamed jasmine rice. Enjoy!
