Ingredients

3-4 people
  1. 500 guncooked cleaned banana prawns (or tiger or king)
  2. 5 clovesminced garlic
  3. 500 glinguine pasta
  4. 3-4tsps chilli flakes (preference)
  5. 1/4 cupquality extra virgin olive oil
  6. 2lemons
  7. 1x Black or burgundy truffle (optional)
  8. 1 tspCracked pepper
  9. 1 tspsalt
  10. 1/4 cupwhite wine

    Start by cleaning your prawns of any shell. Place into mixing bowl and cut 2 lemons in half. Juice them into the prawns and add 4 minced garlic. Add some salt and pepper, stir and leave in the fridge to marinate for 30 mins.

    Bring a pot of water to the boil. Add salt (1-3 tablespoons). Once boiling, add pasta. In a fry pan, line the bottom of the pan generously with oil. On a medium high heat, cook your prawns 3 mins per side or until curled into a ‘c’ and white.

    Remove from the pan and lower the heat. Add 1/4 cup of white wine and deglaze the pan. Allow 3-4 minutes for the alcohol to cook off. Depending on how much garlic is left in the pan, feel free to add more. Add salt and pepper and chilli flakes.

    Turn your heat down to low once the garlic is cooked and golden. Add your cooked pasta and stir so the pasta is coated. Add a splash more lemon juice if needed.

    Return prawns, mix and garnish with parsley and/or truffles.
