Berry Berry Muffins

These yummy muffins are crispy outside, fluffy inside with a sweet pink colour! I use blueberry and blackberry jam which gives the muffins sweetness with a bit of tartness. Of course you can use any kind of jam you like instead. Enjoy!

Steps
- 1
Bring the butter to room temperature. Put the butter into a bowl to stir until it has a smooth texture. Then add the sugar and mix well.
- 2
Separate the eggs. Put the egg whites into another bowl. You will use them later. Add the egg yolks one by one and mix again.
- 3
Add the jam (I use the mixed jam with blueberries and blackberries) and mix in.
- 4
Beat the egg whites until it turns into a stiff meringue. Then add them into the batter bowl. Sift the flour and baking powder into the bowl. Mix everything roughly with a spatula until there is no longer a floury texture, but do not mix too much.
- 5
Pour the mixture into muffin cups, and bake for about 15 to 20 minutes in the preheated oven to 180°C/350°F.
- 6
note: I use handmade jam so it is tends to be less sweet, so adjust the amount of sugar depending on your jam.
