California Farm Chanterelle Mushrooms in Butter

Our first rains arrived this week, and in six months, we will have wild chanterelles growing in the woods. We don’t wait for rain, we grow yellow or white chanterelles indoors in a planterbox, year-round, on sawdust and potting soil, feed it acid coffee grinds to grow in.
We always keep some dried mushrooms on hand for vegan dinner guests. Dried mushrooms reconstitute well in warm water and cook up beautifully in cashew butter with this vegan egg white recipe. You can order chanterelle spores on line for $6. The spores easily produce over $100 in mushrooms every six months. In your window.

Steps

  1. 1

We grow oyster mushrooms and yellow and white chanterelles in windowboxes on sawdust with potting soil and leftover coffee grinds. You can grow chanterelles indoors by just planting a dried chanterelle mushroom cap in potting soil. The spores from adult mushrooms seed the new crop for free, year round. Coffee grinds are a great fertilizer. Online chanterelle mushrooms spores are $6. They easily grow $100 worth every six months.

  2. 2

We dry mushrooms to keep as meat substitutes for vegan dinner guests: oyster, chanterelle, shiitake, woodear and black mushrooms. Lay fresh mushrooms on steamer or other grate under air blower in fridge or airfryer, one week or less to dry till leathery, ready to pack.

  3. 3

Reconstituted dried mushrooms in warm water taste just like fresh mushrooms. Taste best when large ones are halved top to bottom and sauteed medium heat in lots of cashew butter in a cast iron skillet. We then finish them coated in whipped egg white substitute and sauteed another minute.

Instead of beaten eggwhite, we save the cooking liquid from beans, called aquafaba, whipped into egg white substitute and dip the finished sauteed mushrooms in this eggwite, then sauteed a minute in cashew butter, and serve. Delicious.

I teach people at the farmers market to grow small scale fruits and vegetables. My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste. These are the global, organic and vegan family recipes we use.

No, the coffee grinds dissolve into white fertilizer, no trace flavors of coffee grinds, sawdust or other growth media.
