Cauliflower rosettes. Coated first in rice flour batter, then dipped in panko, then deepfried. Then coated in mildly spicy tangy gochujang glaze, sprinkled with sesame seeds. Goes well with french fries cooked in the same hot oil, and pork medallions sauteed in butter with sweet paprika.

  • 4 portionscauliflower rosettes, one whole cauliflower
  • For the batter
  • 1/2 cupBrown Rice flour
  • 3 TbsMilk powder
  • 1 TspChili flakes
  • 1 TspGarlic powder
  • 1 TspBaking powder
  • 1/2 cupwater
  • 1/2 cupPanko
  • For the glaze
  • 2 Tbsgochujang
    California Farm Gochujang Pepper Sauce from scratch
  • 1 TbsSoy sauce
  • 1 TbsRice vinegar
  • 1 TbsSesame oil
  • 2 TbsBrown sugar
  • 1 TbsNatto
  • 1 TspGinger powder
  • 1 TspGarlic powder
  • 1 TbsCorn starch
  • Topping:
  • 1 Tspwhite sesame seeds
  • 1 quartPeanut oil, filtered and reused
  • For the french fries: 2 russet potatoes, 1/4” thick
  • For the pork tenderloin medallions:
  • 1/2loin per person, cut in six medallions
  • 1/2 TspSweet red paprika
  • Equipment: wok, parchment paper, glass bowl for glaze, cast iron skillet for pork medallions
  • Cost: cauliflower $2, pork medallions $3/pound, other $1, $2.25 per dinner

    Wash and trim cauliflower rosettes the size of walnuts, drain dry. Save leaves and stem for soup. Batter the rosettes in flour, baking powder, garlic powder, chili flakes and milk. Dip in panko. Deep fry 20 minutes at 350 F degrees.

    Make gochujang glaze from gochujang sauce, soy sauce, rice vinegar, natto, ginger, garlic, brown sugar, sesame oil, corn starch, and mix glaze with rosettes. Sprinkle with white sesame seeds.

    Fry french fries 10 minutes in same peanut oil, 350F degrees. Cool and filter for reuse. Serve fries with home made fresh mayo.

    Cut half of a fresh pork tenderloin in 6 medallion slices, rub with sweet paprika powder, sautee in butter, 5 minutes each side. Top with fresh mint and serve with french fries and glazed cauliflower rosettes. Enjoy.
