Peel yam, wash and place on fire and add a dash of salt; cook yam till it soft

Beat the two eggs, add a pinch of salt and set aside.

Heat the vegetable oil in a pot, when hot, lower the heat to medium.

Add the onions and stir for about 2 minutes, add tomatoes, stir for a bit then add pepper and cover the pot. Stir from time to time though.

After about 5 minutes, add salt and knorr cube, keep stirring till the tomato is completely soft and separated from the oil.

Slowing pour the egg in and stir to scramble. add spinach and keep stir, cover pot and allow it cook for another 2 mins and reduce it
