Ingredients

Serves 6 servings
  1. 2potatoes
  2. 1carrot
  3. 1onion
  4. 2 1/2 cupswater (600ml)
  5. 4 1/4 cupsmilk (1L)
  6. 1 tablespoonconsommé
  7. 1 teaspoonsalt
  8. Up to 1 tablespoon sugar, to taste

Cooking Instructions

    Cut the vegetables and place them in a pressure cooker. Add just enough water to cover them (2 1/2 cups or 600ml) and apply pressure.

    Once pressure is reached, turn off the heat and let it sit until the lid can be opened.

    When the lid opens, use an immersion blender to puree into a potage, then add the milk.

  4. 4

    Add the consommé and salt, heat, adjust the seasoning, and it's ready to serve.
