At first, I was skeptical, but this is the FIRST time I don't even want to add cheese to my pasta.

▪️Start by soaking the lentils in water for 30-60 minutes.

▪️Next, heat the oil over medium heat and sauté the onion for 10-15 minutes. (Add a little more oil if needed.)
▪️Add the garlic, salt, pepper, sugar, oregano, and tomato paste, and sauté for 2-3 minutes, stirring constantly.
▪️Deglaze with the wine, and after about 3 minutes, add the water, bouillon cube, tomato paste, lentils, and walnuts.
▪️Simmer for about 20 minutes, stirring occasionally. - 3
▪️Add the tomato puree, cinnamon, and chili if desired, as well as any or all of the other optional ingredients if you like.
▪️Simmer for 15-25 minutes.
▪️Meanwhile, prepare the pasta according to its instructions.
▪️Taste the sauce, adjust the flavor to your preference, and serve immediately.
▪️Sprinkle a little more crushed walnuts on each serving. - 4
Notes - Tips:
👉 With "regular" lentils, DOUBLE the soaking and cooking time. However, we prefer red lentils here because they are higher in protein and lower in starch.
👉 You can add the walnuts a little later and blend a small portion of the lentils with an immersion blender once they have softened. (I didn't do this.)

👉 As you can see, I also offer you many substitution options. 😉 For example, if you don't want to use wine, replace it with balsamic vinegar wherever you see wine.
And if you prefer powders instead of onion and garlic, add them towards the end with the cinnamon.
So at the beginning, just let the wine (or balsamic) evaporate a bit and continue as usual.👉 And finally, personally, I liked the sauce a lot even after it completely cooled down.
