Ground Beef Burrito with Black Beans
This Mexican recipe is one of my favorites. Use your preferred ground meat; I usually use a mix.
Steps

Cooking the black beans:
Drain and rinse the black beans that have been soaked overnight.

Place the beans in a large pot and cover with fresh water, making sure the water is about 2 inches (5 cm) above the beans.

Bring the water to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, or until the beans are tender. Stir occasionally and add more water if needed to keep the beans covered.
Once cooked, drain the beans and set aside.

Making the sofrito:
In a large skillet, heat 2 tablespoons olive oil over medium heat.

Add the chopped onion and sauté for about 5 minutes, until translucent.

Add the chopped garlic and cook for 1 more minute, being careful not to burn it.

Stir in the diced red bell pepper and tomatoes, and cook together for about 5-7 minutes, until the vegetables are tender.

Cooking the meat:
Add the ground meat to the skillet with the vegetables.

Increase the heat to medium-high and cook the meat, breaking it up with a wooden spoon, until browned and cooked through, about 10 minutes.

Sprinkle the ground cumin over the mixture and stir well to combine the flavors.

Season with salt and pepper to taste and cook for 2 more minutes.

Adding the beans:
Add the cooked black beans to the skillet with the meat and vegetables.

Mix well and cook together for about 5 minutes to let the flavors blend.
Remove the skillet from the heat and set aside. - 14
Warming the tortillas (optional):
If you want to warm the tortillas, you can do so as follows:
In a clean, dry skillet, heat each tortilla over medium heat for about 30 seconds per side, until flexible and lightly browned.
Alternatively, wrap the tortillas in a damp towel and microwave for 10-20 seconds. - 15
Assembling the burritos:
Place a slice of cheese in the center of each tortilla (warm or at room temperature, as you prefer).
Add a generous portion of the meat and bean mixture over the cheese.
Spoon a tablespoon of guacamole on top of the filling.
Drizzle salsa over the guacamole to taste.
Fold the sides of the tortilla toward the center, then roll up from the bottom to form the burrito, making sure it is well sealed. - 16
Serving:
Serve the burritos immediately. You can serve them with a fresh salad or extra guacamole on the side.

Additional tips:
If you like it spicy and don't have chili powder, you can add a pinch of cayenne pepper or a few drops of hot sauce while cooking the meat.
For creamier beans, mash a small portion before mixing them with the meat.Enjoy your homemade burritos!
