Laab chicken - a Thai classic

Laab Chicken (also spelled Larb Chicken) is a classic dish from northeastern Thailand packed with flavors that are refreshing, tangy, umami, and just the right amount of spice.

Laab is traditionally enjoyed with sticky rice (and eaten with your hands!), it’s a dish that’s both comforting and vibrant. The toasted rice powder adds a subtle nuttiness, but you can skip it if you prefer a simpler version.

Though I grew up in southern Thailand, Laab has always been a nostalgic favorite for me. It’s incredibly easy to make and can be adapted to your taste—more tangy, less spicy, however you like!

While ground chicken is my favorite way to make it, you can also make it with ground pork or ground turkey for a different twist. Enjoy it with jasmine rice or wrap it in crisp lettuce cups for a lighter option.

Ingredients

  • 1 lbground chicken
  • 1/3 cupwater
  • 4 tb fish sauce
  • 4 tb lime juice
  • 1.5 tsp chili flakes (or less)
  • 1/2 tsp sugar
  • 1/4 cup chopped onion or shallots
  • Toppings
  • 1/2 cupchopped mint
  • 1chopped green onion
  • 1/4 cup chopped cilantro (optional)
  • 3 tbToasted rice crumbs

  1. 1

    Finely chop the onion or shallots

    Put 1lb of ground chicken and 1/3 cup of water into a pot or pan on medium heat. Break up the chicken so it does not clump together.

  3. 3

    Once the chicken is cooked, turn off the heat.

  4. 4

    To the chicken, mix in 1/4 cup of your chopped onion or shallot.

  5. 5

    Add 4 tb fish sauce, 4 tb lime juice, 1/2 tsp sugar and 1.5 tsp chili flakes and mix until incorporated. If using the toasted rice crumbs, add now.

    Stir in the toppings: 1/2 cup chopped mint, 1 chopped green onion and 1/4 cup chopped cilantro (optional).

    Enjoy with a side of sticky rice, jasmine rice or as a lettuce cup!
