A delicious treat for all the non-Veg lovers for Suhoor this Ramadan. This is Amaranth Greens with Lamb mince. A perfect one for everyday meals. Be it a Lunch or a Dinner, it's perfect for any day's main course meals. And not only that, it's just right with both Rice and Rotis. You will definitely like it. Amaranth Greens are loaded with so much nutrition. It's a treasure house of so many Vitamins and Minerals. As it is, Green Leafy Vegetables are a perfect choice for any given day to maintain that healthy balance. With Amaranth Greens added to it, this becomes a super delicious and a healthy meal for Suhoor. And with Phulkas or Chapatis and even Parathas, it would be such a delightful bliss.
I added a cup of fresh Green Peas too to make it even more nutritious and also to increase the amount of the Curry. It is such a lovely option that can suffice a large crowd easily.

Cooking Instructions

Heat oil in a pan. Add ginger-garlic paste and a little salt along with green chillies. Saute well until the raw smell of the ginger-garlic fades.

Now add the chopped onions and the rest of the spices. Saute well for a minute or two until the onions are light brown. Also, add the lamb mince to it with green peas. Saute well on a high heat for almost 3-4 minutes. Cover and cook on a medium flame afterwards. Keep stirring in between. Lamb mince will be almost half done in 8-10 minutes. Also, add a little of chopped coriander leaves too.

After the stipulated time of 10 minutes, add the chopped amaranth greens too. Simmer on a low to medium heat with a lid on for about 15-18 minutes.

Serve this tempting all green sabzi alongside rice and rotis both for suhoor this Ramadan. Enjoy!
