With just a little bit of everything left in the fridge, I quickly put together this sweet and tasty stir-fry in just a few minutes.

Rinse the bean sprouts. Peel the luffa gourd and cut it into pieces. Mix the ground pork with a little fish sauce and sugar to marinate. Heat a pan, add the white part of the green onion and sauté until fragrant, then add the pork and stir-fry until cooked.

Add the luffa gourd and stir-fry over high heat. When the luffa turns translucent, adjust the seasoning to taste.

When the flavor is right, add the bean sprouts, reduce to medium heat, stir a few times, then turn off the heat. Add the green onion and a sprinkle of pepper. Serve hot—the bean sprouts stay crisp, the luffa is tender and sweet, and it's delicious.
