Loaded Mexican Tortilla Pinwheels
#CA2025 This simple recipe can be put together quickly and makes a good appetizer or lunch.
Cooking Instructions

Add salsa, cream cheese, sour cream and taco seasoning in a bowl. Stir to mix.

Add in cheese, onion, black olives, corn and black beans to the cream cheese mixture. Use a rubber spatula to fold all the ingredients together.

Add refined beans to a microwave safe bowl and warm to spreading consistency.

Take a tortilla and spread a thin layer of refried beans on it. Take 1/3 cup of mixture and spread on tortilla leaving room at the edges. Fold like an envelope and roll tightly. Place seam down on a tray.Repeat until you have used your mixture. Cover tray with plastic wrap and place tray in refrigerator for two hours.

Cut into 1 “ pieces. Serve with salsa for dipping.
