Loaded Mexican Tortilla Pinwheels

  1. 12-10flour burritos tortillas
  2. 1 cupsalsa (use more if needed)
  3. 1 pkgcream cheese 8 ounces (cubed and softened for easier mixing)
  4. 3/4 cupsour cream
  5. 1 cupshredded cheddar cheese
  6. 3 Tablespoonstaco seasoning
  7. 1 canchopped black olives (4.5 ounces drained)
  8. 1small onion chopped
  9. 1 can (15 ounce)black beans rinsed and drained
  10. 1 can (15 ounce)yellow or white corn drained
  11. 1 can (15 ounce)refried beans

    Add salsa, cream cheese, sour cream and taco seasoning in a bowl. Stir to mix.

    Add in cheese, onion, black olives, corn and black beans to the cream cheese mixture. Use a rubber spatula to fold all the ingredients together.

    Add refined beans to a microwave safe bowl and warm to spreading consistency.

    Take a tortilla and spread a thin layer of refried beans on it. Take 1/3 cup of mixture and spread on tortilla leaving room at the edges. Fold like an envelope and roll tightly. Place seam down on a tray.Repeat until you have used your mixture. Cover tray with plastic wrap and place tray in refrigerator for two hours.

    Cut into 1 “ pieces. Serve with salsa for dipping.
