  • 1 cupbulgur
  • 2 tablespoonsolive oil
  • 2large tomatoes chopped
  • 1small chopped onion
  • 2garlic cloves
  • 2 cupsvegetable broth
  • 1 tablespoontomato paste
  • 1 teaspooncinnamon
  • Parsley

    Put the bulgur in a large bowl and pour 1 cup of hot water over it. Leave it for 10 minutes for it to absorb the water.

  2. 2

    Heat the olive oil over medium heat in a big pan. Add the chopped onion and garlic. Cook for 5 minutes.

  3. 3

    Add in the chopped tomatoes and cook for another 5 minutes.

  4. 4

    Add the tomato paste and cinnamon and stir the mixture.

  5. 5

    Finally, add in the vegetable broth, until the mixture is boiled then add in the prepared bulgur. Mix everything together.

  6. 6

    Lower the heat and cover the bulgur mixture for around 15–20 minutes.
