Keep the eggshells whole for making these gourmet scrambled eggs and refill the shells with the gourmet scrambled egg mix, a fun and special way to serve Easter Eggs.

Cut off the tapered tips of 4 fresh farm eggs by inserting a small sharp knife in the shells, save the shells, drain the eggwhites and egg yokes into a bowl. Rinse the egg shells, set upside down in egg cups to dry.

Use fork to mix eggwhites, egg yokes, heavy cream and flaked seasalt with five spice. If you dont have five spice, you can make it yourself from scratch, using pepper, cinnamon, cloves, fennel seeds and star anise.

Stir the egg mix into a medium hot cast iron skillet with molten butter till scrambled but still moist, about one minute.

Load scrambled eggmix back into the egg shells. Top with chopped parsley. Serve upright in eggcups.
