Banana Bread with Cinnamon Swirl

I’m by no means a baker, but I absolutely had to share this. It was delicious and so easy to put together. I hope you give it a go because there’s nothing as nice as fresh, warm banana bread!

Preheat your oven to 175 degrees Celsius and grease a 9x5 inch loaf pan.

In a large bowl, mash the ripe bananas until mostly smooth. Add the softened butter and sugar; beat until the mixture is light and fluffy. Then, mix in the eggs one at a time and stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.

Gently fold the dry ingredients into the wet mixture until just combined. Avoid over-mixing to keep the loaf tender. Place into greased bread pan.

For the swirl, In a small bowl, mix ¼ cup granulated sugar with 1 teaspoon ground cinnamon. Dust over the top of the mixture in the bread pan generously.

Bake for 45-55 mins on 175 degrees, checking every 20 mins or so. Use a skewer to test through the centre to check doneness. If the skewer is clean or has little crumbs when removed, it is ready.

Allow to cool for 10 in the bread pan before allowing to cool further for 10-15 mins on a wired rack. Enjoy!
