Ingredients

  • Banana bread
  • 2-3very ripe bananas (about 1-1.5 cups mashed)
  • 1/2 cupunsalted butter (softened or melted and cooled)
  • 3/4 cupgranulated sugar (or a mix of white and brown for extra richness)
  • 2large eggs (room temp)
  • 1 teaspoonvanilla extract (or maple syrup)
  • 1/2 teaspoonbaking soda (or 3 tsps baking powder)
  • 1/4 teaspoonsalt
  • 1 teaspooncinnamon (plus extra for swirl)
  • Cinnamon Swirl
  • 1/4 cupgranulated sugar
  • 2 teaspoonscinnamon

    Preheat your oven to 175 degrees Celsius and grease a 9x5 inch loaf pan.

    In a large bowl, mash the ripe bananas until mostly smooth. Add the softened butter and sugar; beat until the mixture is light and fluffy. Then, mix in the eggs one at a time and stir in the vanilla extract.

    In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.

  4. 4

    Gently fold the dry ingredients into the wet mixture until just combined. Avoid over-mixing to keep the loaf tender. Place into greased bread pan.

  5. 5

    For the swirl, In a small bowl, mix ¼ cup granulated sugar with 1 teaspoon ground cinnamon. Dust over the top of the mixture in the bread pan generously.

  6. 6

    Bake for 45-55 mins on 175 degrees, checking every 20 mins or so. Use a skewer to test through the centre to check doneness. If the skewer is clean or has little crumbs when removed, it is ready.

  7. 7

    Allow to cool for 10 in the bread pan before allowing to cool further for 10-15 mins on a wired rack. Enjoy!
