🌟saute the veggies: Heat butter/ olive oil in a pan and saute the leeks until soft (2-3 mins). Add boiled corn, carrots, green bell peppers, 1/4 tsp fresh thyme and cook for another 2 mins, finally add half cut cherry tomatoes/regular tomato diced mix well with cooked veggies set aside.

🌟Whisk and cook the eggs: in a bowl, Whisk the eggs with milk, salt, black pepper powder, finely chopped red chilli and paprika powder, fresh thyme. Heat a little more butter/ oil in the same pan and pour the egg mixture in. Cook on medium - low heat until the eggs are set but slightly running on top.

🌟 Assemble the omelette: Add sauteed veggies mix to one half of the omelette. Sprinkle with cheese (if using) and fresh thyme, fold the omelette in half. Cook for another 2 mins until fully set, then serve hot. Garnish with thyme. Enjoy your Royal Green Omelette with a slice of toasted bread, simple green salad and with fresh cucumber slices.
