Ingredients

Serves 2 servings
  • For the crispy rice cakes
  • 1 cupcooked jasmine rice (about 200 grams)
  • Vegetable oil for frying
  • Seasonings
  • 3.5 ozboiled pork skin, cut into strips (about 100 grams)
  • 1 packagehigh-quality fermented pork sausage (naem)
  • 2shallots, thinly sliced
  • 1 stalkgreen onion, thinly sliced, and 1 stalk sawtooth coriander (culantro), thinly sliced
  • 2 tablespoonsfried peanuts
  • 1 tablespoonyoung ginger, julienned
  • 1 teaspoonroasted chili flakes
  • 3 tablespoonsfish sauce
  • 3 tablespoonslime juice
  • 1 teaspoongranulated sugar
  • 5Thai bird’s eye chilies, thinly sliced
  • Fresh vegetables for serving

Steps

20 minutes
  1. 1

    To make the crispy rice cakes: Take the bottom layer of cooked jasmine rice, break it up, and spread it out to dry completely in the sun until hard. Pound or crush into small pieces.

  2. 2

    Heat the oil until very hot. Fry the dried rice pieces in batches until they puff up and become crispy. Remove and drain on paper towels until dry. Let cool completely.

  3. 3

    Break apart the fermented pork sausage into small pieces. Add the pork skin and all the seasonings except the crispy rice cakes. Toss everything together and adjust the seasoning to taste.

  4. 4

    Add the crispy rice cakes last. Toss again, transfer to a serving plate, and serve immediately with the fresh vegetables.
