A popular East African sweet dumpling, is crispy outside, soft inside, and soaked in sweet syrup.

Prepare Dough: In a bowl, mix flour, yeast, sugar, cardamom, and salt. Gradually add lukewarm water to form a thick, sticky batter. Cover and let it rise for 1 hour.

Make Syrup: In a saucepan, combine sugar and water. Boil until slightly thickened (about 5-7 minutes). Add cardamom and lemon juice. Set aside to cool.

Fry Kaimati: Heat oil in a deep pan over medium heat. Using a spoon or your fingers, drop small balls of batter into the hot oil. Fry until golden brown (2-3 minutes per batch). Remove and drain excess oil.

Coat in Syrup: Dip the fried kaimati in the cooled syrup, ensuring they’re well-coated. Remove and place on a serving plate.

Serve: Enjoy warm or at room temperature.

TIP: Adjust syrup sweetness to taste. Store leftovers in an airtight container for up to 2 days.
