Prepare Batter: In a bowl, mix rice flour, all-purpose flour, sugar, yeast, cardamom, and salt. Add coconut milk and lukewarm water gradually to form a thick, smooth batter. Cover and let it rest for 1 hour until bubbly.

Heat Pan: Heat a vitumbua pan (or small round mold pan) over medium heat and lightly grease with oil.

Cook Vitumbua: Pour batter into each mold, filling 3/4 full. Cook for 2-3 minutes until the bottom is golden, then flip using a skewer or spoon and cook the other side for 1-2 minutes.

Serve: Remove from pan and repeat with remaining batter. Serve warm as a snack or breakfast treat.

TIP:: If you don’t have a vitumbua pan, use a small non-stick pan or pancake mold. Store leftovers in an airtight container for up to 2 days
