Today we're heading to Turkey to make a classic! This is one of the best soups I tasted in Turkey. The soup is of Kurdish origin.

In a large pot, heat the olive oil and sauté the onion, carrots, and potato.

Add the well-rinsed lentils, then season with salt, black pepper, and turmeric.

Pour in the boiling water and simmer on low heat for 30 minutes.

Meanwhile, prepare the spiced butter: In a saucepan, melt butter with tomato paste, dried mint, and paprika.

Blend the soup until smooth, then stir in the prepared spiced butter. Mix well and let it simmer for a few more minutes.
