Prepare the piadina dough and cook it in a preheated skillet. Lightly wipe the skillet with an oiled paper towel to prevent sticking. Cook over low heat for 10-11 minutes, turning occasionally for even cooking.

While the piadina is cooking, make the salad with fennel, orange, black olives, and pumpkin seeds. Dress with lemon juice, oregano, salt, and extra virgin olive oil.

Make the hummus by blending cooked chickpeas with black pepper, tablespoons of extra virgin olive oil, and water. Add water slowly until you reach the desired consistency.

Crack an egg and mix with the egg whites and salt. Heat a skillet and pour in the egg mixture. Cook over low heat for 2-3 minutes until the egg whites start to set. Place the piadina on top and continue cooking until the egg is more set and everything is ready to flip.

Use a plate to help flip everything. Add a few tablespoons of hummus, flax seeds, and carrots cut into strips. Fold the piadina.
