Maharashtrian Authentic Puranpoli

Puranpoli is a traditional sweet dish. In Maharashtra ,it is prepared on festivals as feast. Also it is offerd to God as naivedya. ( Prasadam) , Puranpoli is generally eaten with desi ghee or sometimes with milk. Puranpoli is a perfect blend of protein and iron ,as it's main ingredients are chana dal and jaggery. All the ingredients used in it are easily available at very reasonable price means it is in reach of everyone.

All the ingredients used in it are easily available at very reasonable price means it is in reach of everyone.
Steps

First of all wash chana dal 2-3 times properly. Then add water double in quantity and cook it in cooker for 4 to 5 whistles and on simmer for 5 minutes.

Now once the steam of the cooker is released, take out the dal and allow to cool.

In the meantime take wheat flour in a big parat (plate),add oil to it and knead a soft dough and keep aside.

Now remove excess water from chana dal and keep aside to be used later to prepare katachi aamti.

Now transfer the dal to a mixer jar (traditionally puran yantra was usede to grind puran.),grind it,then add sugar and jaggery and grind to get a smooth texture, this is must to make our Puranpoli soft.

Now add little ghee in a kadai and transfer chana dal, sugar and jaggery mixture from mixer jar to kadai,now on low cook it,continuously stirring it to avoid overcooking.

Once the mixture starts gathering in middle of the kadai,then do a spatula test, means if the spatula when placed into it doesn't fall but remains straight. It means it is done,now add nutmeg powder, mix well and turn off the flame and let it cool completely.

Now take small portion of douugh,give it shape of a bowl (vati) and place puran (stuffing) in the center of it and collect all edges and pack it properly and press a little, with the help of hands spread the puran stuffing till edges

Now role this Puran poli properly,and roast from both sides with little desi ghee.

Serve it with desi ghee.
