In a large bowl, add the eggs, sugar, melted butter (or vegetable oil), milk, and vanilla. Whisk well until smooth and combined.

Add the flour, baking powder, and cinnamon. Mix again until you have a thick, smooth batter.

Peel and cut the apples into small pieces (or thin slices). Add them to the batter and gently fold to distribute evenly.

Lightly butter a baking pan (9-10 inches/22-24 cm) and pour in the batter. Smooth the top and sprinkle with a little sugar and cinnamon.

Bake in a preheated oven at 340°F (170°C) for 45-50 minutes, until golden and a knife inserted in the center comes out clean.
