Moroccan Semolina Pancakes with Raisins (Baghrir)

Prepare the yeast: In a small bowl, dissolve the dry yeast with a little warm water and the sugar. Let it sit for a few minutes until it becomes foamy.

Mix the ingredients: In a large bowl, combine the semolina and water. Add the salt, baking powder, orange blossom water (if using), and the activated yeast. Blend everything with an immersion blender or in a regular blender until the batter is very smooth.

Let the batter rest: Cover the bowl and let the batter rest for about 30 minutes at room temperature, until bubbles form.

Cook the pancakes: Heat a nonstick skillet over medium heat. Pour in a small ladleful of batter. As soon as holes start to appear on the surface, sprinkle a few raisins directly onto the pancake. Cook without flipping until the pancake is set.

Remove from the pan and brush the surface with melted butter. Repeat until all the batter is used. Serve warm with a drizzle of melted honey or flavored butter. 🍯
