In a large bowl, combine the flours and make a well in the center. Dissolve the yeast and sugar in warm water (about 86°F/30°C) in the well. Start mixing, gradually adding the remaining ingredients, until you have a smooth, compact dough.

Cover with plastic wrap and let rise for about 2 hours, until doubled in size. Knead the dough again and divide into 7 pieces, about 4 1/2 ounces (125 grams) each. Cover and let rise again for 1 hour. After rising, flatten each piece and roll it up.

Place the rolls in a greased loaf pan, cover, and let rise until doubled. Carefully brush the top with a little oil and bake at 340°F (170°C) for 35–40 minutes.
