In this particular version, I have used three types of Lobia that's commonly available in our Country. White, Red/Brown and Black Eyed. All are similar in terms of taste and flavour. These small beautiful looking Peas are a treasure full of amazing health benefits for a good lifestyle. It offers numerous benefits due to it's high Protein and Fiber content. It promotes Heart health by lowering Cholesterol and high Blood pressure levels. By improving the overall digestive health, it aids in weight management too. It boosts immunity, supports bone health and also helps to lower the Blood Sugar levels.
Not only that, it improves our Skin health and provides a sustained source of Energy also.

Wash and soak all 3 types of lobia white, red and black eyed peas in equal proportions in clean drinking water as a first step towards the making of the actual recipe. Soak overnight for best results.

Later on, don't discard the water. Use it in curries or gravies or even for kneading the dough. Use some of it to boil the lobia for the recipe. Or pressure cook it whichever is convenient.

Heat oil in a pan. Add asafoetida, both black and yellow mustard seeds, curry leaves and chopped ginger. Saute for a minute and then add the chopped onion. Saute until translucent.

Next is to add the boiled mixed lobia, salt and the powdered spices too. Mix well. Stir fry all of that for about 3-4 minutes until crisp and done. It doesn't take much time and is done in just a few minutes. That's it.

Serve it piping hot to your loved ones at Tea-time or Shaam ki Chai. It's a perfect choice for a healthy snacking idea. Enjoy!
