First, we prepare the filling; start by adding cream cheese, powdered sugar and vanilla. Scoop into small balls and freeze for AT LEAST 2 hours.

Add sugar and butter (mix this fiest until smooth); then food coloring, egg and vanilla. Stift in flour, cocoa, cornstarch, baking powder, baking soda and salt, mix until the dough forms. Add white chocolate chips.

Take about 50-60 g of dough, flatten it and 1 large or 2 small frozen cheesecake balls. If you want, add some raspberry jam on top; then seal the dough and shape it into a ball. Freeze them for at least 2 hours before baking.

Preheat the oven to 180°C and bake the cookies for 12-16 minutes. While cooking, you can add extra chocolate on top for a better finish.
