In a food processor, add in the vegetables along with onions, green chillies, and ginger. Chop them coarsely. Remove and keep aside.

Take boiled quinoa in a mixing bowl.

Add in the vegetables along with the fresh breadcrumbs.

Add the dry masalas - salt, Kashmiri red chilli powder, cumin powder, coriander powder, and amchur powder. Mix well.

Add the egg and mix well. The mixture should be able to hold its shape.

In the meantime, pre-heat the waffle iron. I am using an electric waffle iron for this recipe.

Divide the mixture into 10 equal portions and shape them into balls. Once the waffle iron is hot, grease it well with oil. Add the mixture ball and flatten it out a bit

Close the waffle iron lid and cook until done. Do not attempt to open the lid to check before it is cooked or the waffles might disintegrate. I used an electric waffle iron and it takes about 10-12 minutes to cook. Cook the remaining waffles similarly.

Let them cool for a few minutes. Quinoa Waffle Bites are ready to enjoy. Serve them with your favorite sauce or chutney.
