Ingredients

  • Peachy Pulled Pork
  • 4 poundsboneless pork loin
  • 2 (29 ounce)cans peaches in light syrup
  • 2/3 canwater (use one of the peach cans to measure)
  • 1 cuplow-sodium soy sauce
  • 6 tablespoonssesame oil
  • 1 1/2 teaspoongarlic powder
  • 1 teaspoonground ginger
  • Rice
  • 4 cupswater
  • 2 cupslong-grain white rice
  • 2 tablespoonsbutter (optional)
  • 1/2 teaspoonsalt (optional)
  • Side Dishes
  • 1 boxCravin' Pork Egg Rolls (optional)
  • 1 packageKnorr's Teriyaki Noodles (optional)

Steps

  1. 1

    Make sure to prepare this dish at least seven hours prior to needing it ready, especially if you'll be away from home while it's cooking. Mine was perfectly cooked after 7 hours of cooking.

  2. 2

    If frozen, allow the boneless pork loin to thaw before placing it into the crockpot.

  3. 3

    Allow your crockpot to warm slightly on high heat then place in the boneless pork loin.

  4. 4

    Cover the meat in the peaches with the light syrup included, adding the water to slightly dilute the syrup.

  5. 5

    Pour in the low-sodium soy sauce and sesame oil, making sure to evenly distribute it over the meat.

  6. 6

    Add in the garlic powder and ginger, making sure to sprinkle it over the meat rather than just dumping it over a single area.

  7. 7

    Place the lid on your crockpot and allow meat to cook for at least seven hours or until meat is tender and thoroughly cooked.

  8. 8

    Once cooked, use two forks to pull (shred) the pork. Do not remove the peach slices, they should be shredded and mixed in with the meat.

  9. 9

    For the rice, pour water into a medium saucepan and bring it to a boil. Add the butter and salt (optional), allowing the butter to melt. I personally prefer adding the butter and salt, but it's completely up to your taste.

  10. 10

    Add the rice to the water and return it to a boil. Reduce the heat to low or medium-low, covering the pot and allowing the rice to simmer; begin checking tenderness and liquid amount after around 17 minutes. If the rice isn't fully cooked and the water isn't fully absorbed, continue simmering while covered until completion. My rice was fully done after 20 minutes.

    Once the rice is tender, turn off the heat, but leave the pot on the burner to ensure all water is completely absorbed.

    Once no liquid remains, uncover the pot and fluff the rice with a fork.

  13. 13

    In a separate pot, prepare the Knorr's Teriyaki Noodles as instructed by the package. This step is completely optional.

  14. 14

    Cook the Cravin' Pork Egg Rolls as instructed on the box. You can use any brand and type of egg roll (chicken, shrimp, beef, or other) that you prefer, this brand and type is just my family's go-to (though I prefer the Great Value brand). This step is completely optional.

  15. 15

    Place pulled pork over rice, serve with the sides (if serving them), and enjoy your Chinese-Inspired Peachy Pulled Pork! 🥡

  16. 16

    💡Tip: If leftover pork remains, place it into a freezer bag and freeze to have a quick meal on-hand for later.
