Ingredients

15-20 min
3-4 plates
  • 3 cups fusilli pasta (twisted)
  • 1medium to big size tomato
  • 1medium size onion
  • 1 tspgarlic paste
  • 2 tbspolive oil
  • 1 tspchilli powder
  • 1 tspsalt
  • 1 tspsugar
  • 1 tspdried basil (can replace with 5 fresh leaves)
  • 1/2 tspdried oregano (can replace this with 20 fresh leaves)
  • 2-3 tbspgrated cheddar/gouda/parmesan cheese

    Cut onion and tomato in thin slices.

  2. 2

    Add oil and onion at the same time in the pressure cooker. Fry onions till they are translucent. Next add garlic and fry for a few seconds.

    Add tomatoes, Basil, oregano, salt, sugar and chilli powder. Combine everything and wait till oil oozes.

    Add pasta combine well. Level the pasta. Now add water only till the level of pasta if the pasta is thin and small. If using thick pasta like mine in the pic, you need to add water 1 cm above the level. Bring it to boil. Cover the lid of the cooker. Wait for 3-4 whistles (6-8 if using thick pasta variety) on medium to high heat. Let the cooker cool down.

    You'll notice that the pasta is perfectly soft and there is only a little moisture lef tin the pasta which is needed so the pasta isn't too dry. If the pasta looks too dry, add a little water, combine and cook it till everything blends well. If it's too much water, burn a bit. If the pasta remained a bit uncooked, add an extra whistle next time.

    Sprinkle some cheese while the pasta is still steaming hot. Close the lid again allowing the cheese to melt in the steam. Serve hot.
