Ingredients

4 people
  1. 1 lbground beef
  2. 4 cupsMexican cheese
  3. 3/4 cupshredded white cheddar
  4. 2 cupsenchilada sauce
  5. 1sliced yellow bell pepper
  6. 1sliced red bell pepper
  7. 2chopped jalapeños
  8. 1sliced red onion
  9. 7Trader Joe’s habanero lime wraps
  10. 2 cupsenchilada sauce
  11. 1/2 cuptaco seasoning

Cooking Instructions

45 minutes
  1. 1

    Saute your onions and peppers with 1/4 cup of the taco seasoning.

  2. 2

    Cook your ground beef in the remaining taco seasoning.

  3. 3

    Add 1/2 cup enchilada sauce to a rectangular pan.

  4. 4

    Add a spoonful of Mexican cheese, ground beef, and peppers to a tortilla. Repeat for the rest of the tortillas.

  5. 5

    Load all of the tortillas into the rectangular pan.

  6. 6

    Cover the enchiladas in the remaining enchilada sauce.

  7. 7

    Top the enchiladas with the white cheddar and remaining Mexican cheese.

  8. 8

    Cover the enchiladas in foil, and bake them at 350 F for 30 minutes.

    Serve and enjoy!
