‘Doria’ is a Japanese dish of baked rice. Butter Rice is covered with White Sauce and Cheese, then baked in the oven. Variations are limitless. This dish is very similar to my ‘Bolognese Doria’. I used Taco Meat instead of Bolognese Sauce. Taco Meat, Butter Rice, White Sauce and Cheese, that can’t go wrong. It was delicious!

Ingredients

45 minutes
4 Servings
  • 4servings Cooked Rice
  • 20 gButter
  • 1/2 cupPeas *frozen Peas are OK
  • *Note: You can add other Vegetables instead of Peas, such as Broccoli, Carrot, Onion, etc
  • Salt & Pepper
  • 1 cupgrated Tasty Cheese (Cheddar) *OR Cheese of your choice
  • Oil for greasing baking dish
  • Taco Meat
  • *Note: It is your choice to cook Taco Meat using store- bought Seasoning Mix in your favourite way
  • 500 gBeef Mince
  • 1/2-1Onion *finely chopped
  • 1 cloveGarlic *finely chopped
  • 1/2-1Red Capsicum *cut into small pieces
  • 1 tablespoonOil
  • 2 teaspoonsGround Cumin
  • 2 teaspoonsGround Coriander Seeds
  • 2 teaspoonsPaprika
  • 2 teaspoonsDried Oregano
  • 1/2-1 teaspoonSalt
  • 1/4-1/2 teaspoonGround Chilli *OR Jalapeño, Tabasco, etc
  • 1 can (400 g)Crushed Tomatoes OR Diced Tomato
  • White Sauce
  • 40 gButter
  • 4 tablespoons (1/4 cup)Plain Flour
  • 2 cupsMilk
  • Salt & Pepper

Steps

45 minutes
  1. 1

    Cook Taco Meat first. Heat Oil in a frying pan over medium heat, cook Onion, Garlic and Capsicum for a few minutes, add Beef Mince, and cook until Beef changes colour. Add all seasonings and Tomatoes, and cook, stirring occasionally, until the mixture is thick.

    Preheat oven to 200℃.

    Place 20g Butter and Peas in a heat-proof bowl, heat until Butter melts and Peas are hot. Add Cooked Rice and mix to combine. If Rice is cold, heat until warm. Season with Salt & Pepper. *Note: Alternatively you can do this process using a frying pan.

    To make White Sauce, heat Butter in a saucepan over medium heat until melted, add Flour, and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.

  5. 5

    Lightly Oil a large ovenproof dish, spread the Rice & Pea mixture, place Taco Meat, and pour the White Sauce evenly. Cover with grated Cheese, and bake for 15 to 20 minutes OR until golden.
