Ingredients

25 minutes
Makes 2 parathas
  1. 1/4 cupwhole wheat flour dough
  2. To boil kala chana :
  3. 1/4 cupkala chana sprouts
  4. 1 pinchturmeric powder
  5. Salt to taste
  6. Other Ingredients :
  7. 1 tbsponions, finely chopped
  8. 2garlic flakes, finely chopped
  9. 1 tspkasuri methi
  10. 1 pinchcarom seeds (ajwain)
  11. 1 tspgreen chillies (hot variety)
  12. 1/4 tspred chilli powder
  13. 1 pinchgaram masala
  14. 1 pinchcoriander powder
  15. 1 pinchchole masala
  16. 1 pinchroasted cumin seeds powder
  17. Salt to taste
  18. Ghee to cook the parathas
  19. Fresh curds to serve
  20. Onion rings ---- accompaniment

Cooking Instructions

    Boil kala chana with salt & turmeric powder in pressure cooker upto 4 whistles.

    Open pressure cooker once the steam is released.Drain the water from the boiled chana. Mash them while hot.

    Cool the mashed chana & add all the dry spices. Add carom seeds, kasuri methi, chopped onions, chopped garlic, green chillies, chopped coriander & salt.

    Divide the dough into 2 portions. Also divide the stuffing into 2 portions.Take 1 portion & roll it 2 inch in diameter with the help of some dry flour. Put 2 tbsp of stuffing in the center & bring the edges together to make a ball.

    Now roll into a semi thick paratha. Cook the paratha on both the sides with the help of ghee, till golden & crispy. Make another one the same way.

    Serve the parathas hot with a dollop of butter on the top, a bowl of fresh curds & a few onion rings.
