Take the left over cooked quinoa-mung and oats in a bowl, add 1c water, andleave in a warm place to ferment over night. Add the veggies, curd and Greek yogurt. Mix with a spoon. salt to taste

This is what gives the unique taste, flavor and aroma to the dish. Over medium heat, in a saucepan heat oil. Pop mustard seeds. Then stir in cumin seeds, tender curry leaves, and green chilies. Stir in asafetida, a minute. Turn off the stove. I did this in a microwave. Add this to the bowl with fermented stuff and veggies. garnish with microgreens. You may serve with pickle, garlic chutney or gonkura chutney. It tastes divine. Enjoy the nutrient rich left over make over dish!
