Quinoa Broccoli Tikki

Cooking Instructions

Grind oats into a fine powder and set aside.

Boil 3/4 cup water, add quinoa, salt, and 1 teaspoon oil. Cook for 15 minutes, then cool.

Blanch and blend broccoli if frozen, or grate if fresh.

In a bowl, mix quinoa, broccoli, coriander, carrots, chili ginger paste, flaxseed, oats, lemon juice, salt, and pepper.

Shape mixture into small round patties.

Heat a non-stick pan with oil, cook patties until golden brown and crisp on both sides.

I've always made this salad when I've wanted to eat a lot of warm vegetables.Boil the broccoli just before the potatoes are done steaming. Don't put them in cold water, but mix them in while they're still warm.You need to drain the broccoli while still hot, so after draining into a colander or sieve press on them with a ladle or masher to expel any excess moisture.
