Ingredients

30-35 minutes
Serves 4-5 servings
  1. 9 ozpaneer (about 250 grams)
  2. 1large onion, finely chopped
  3. 1onion, roughly chopped
  4. 1bell pepper, roughly chopped
  5. 1/2 teaspoon nigella seeds (kalonji)
  6. 1 tomato, finely chopped
  7. 1/2 cuptomato puree (about 120 ml)
  8. 1-2 green chilies, finely chopped
  9. 2 tablespoonsginger, finely chopped
  10. 6-7garlic cloves
  11. 2 tablespoons plain yogurt
  12. 1/3 cup heavy cream (about 80 ml)
  13. Whole spices for kadai masala
  14. 1 tablespoon whole coriander seeds
  15. 1 tablespoon cumin seeds
  16. 1/2 tablespoon fennel seeds
  17. 1/2 teaspoon black peppercorns
  18. 4-5 cloves
  19. 4-5 dried red chilies
  20. 1 bay leaf
  21. 3-4 green cardamom pods
  22. 1-2 black cardamom pods
  23. 1 small piece cinnamon stick
  24. 2 teaspoons white sesame seeds
  25. 1 tablespoon dried fenugreek leaves (kasuri methi)
  26. 2 teaspoons Kashmiri red chili powder
  27. 1/2 teaspoon turmeric powder
  28. 1-2 teaspoons coriander powder
  29. 1 teaspoon chaat masala
  30. 1 teaspoon kitchen king masala
  31. 2 tablespoons ghee (clarified butter)
  32. 2 tablespoons refined oil
  33. Salt to taste

Steps

    First, gather all the ingredients needed to make Kadai Paneer Masala.

    Dry roast all the whole spices for the kadai masala over low heat.

    Let the roasted whole spices cool, then grind them into a powder. In a kadai (wok), heat oil and sauté the ginger and garlic.

    Next, sauté the finely chopped onion, then add the tomato and sauté as well. Let this mixture cool, then grind it into a paste.

    In a separate pan, fry the roughly chopped onion, bell pepper, and paneer in ghee with red chili powder and turmeric for 2-3 minutes.

    In the kadai, add cumin seeds for tempering, then add turmeric, red chili powder, and coriander powder.

    Add the ground tomato-onion paste and a little hot water. Cover and cook for 4-5 minutes. Mix in the tomato puree and cook well for another 5-6 minutes. Add the yogurt and mix. Then add kitchen king masala, garam masala, and the ground kadai masala. Mix in the sautéed onion, bell pepper, and paneer. Cover and cook on low heat for 4-5 minutes.
