1 nonstick skillet (crucial for perfect cooking)

Separate the egg whites from the yolks.
Beat the yolks with a pinch of salt and a twist of pepper. Set aside.
Add the sparkling water to the egg whites, then beat them with an electric mixer until stiff peaks form.
Gently fold the beaten egg whites into the yolks using a flexible spatula, lifting the mixture to keep it airy.

Melt a small amount of butter in a hot skillet until it turns golden brown. Pour the egg mixture into the skillet without stirring.
When the omelette is almost set, carefully fold it in half with a spatula. Let it cook a little longer to your desired texture.
