For kadhi :Whisk yogurt, water and gram flour in a bowl.

Put this mixture on stove on low medium heat. Add grated ginger, turmeric powder, sugar and salt. Bring to a boil, then simmer until thickened.

Heat ghee in a pan, add cloves, cinnamon, curry leaves and mustard seeds. Let it splutter then add asafoetida.

Pour this tadka in the kadhi. Serve hot.

For sev no dudhpak : Roast sewaiyan and Dryfruits in ghee for 2-3 minutes.

Add milk in roasted sewaiyan & nuts.

Reduce milk to half stirring occassionally.

Add sugar and cardamom powder. Mix well. Cook it for 5 minutes and turn off the gas.

Let it cool for half an hour. Then refrigerate it for 2 hours.

Enjoy chilled with puri.

For puri : Mix wheat flour, semolina and refined flour.

Add sugar, salt and oil. Mix well.

Gradually, add hot water to form a smooth dough. Knead for 5 minutes.

Rest the dough for 30 minutes.

After 30 minutes again knead the dough and make small balls for puri.

Roll out each ball into a circle.

Heat oil in a kadai add puri.Let the puri gets fry for 5 to 10 seconds. Press the puri on top using a frying spoon so that it puffs. Flip it to other side. Fry it until it turns light golden in color.

Place fried puri on paper napkin. Repeat the same process.

Gujarati puri is ready. Serve it hot.
