Nakach cookies are a traditional Algerian sweet from the good old days. Our grandmothers perfected making and shaping them, decorating each one in unique ways. These date-filled cookies melt in your mouth.

Prepare the dough by rubbing the butter into the flour, then add the egg and a mixture of water and orange blossom water. Mix until combined and let the dough rest.

Knead the date paste well after removing any pits. Add ground sesame seeds or walnuts, 1 tablespoon butter, and orange blossom water. Mix until smooth, then form the date mixture into a ball using the vegetable oil.

Weigh out 1 ounce (30 grams) of dough and 2/3 ounce (18 grams) of date filling for each cookie. Shape the dough and filling into logs, then form into crescent shapes. Let them rest, decorate as desired, and let them rest again before baking. Bake in a preheated oven at medium heat until golden.
