Easy and quick salad, perfect for hot summer days! The combination of sweet corn and olives brings out the best in the tomatoes, creating a delicious and successful dish that's ideal as a light dinner or as a salad/side for any main course.

2-3tomatoes or more cherry tomatoes
1/4small yellow onion
10Kalamata olives, halved
2 tablespoonscanned or fresh sweet corn (about 30 grams)
1/2 teaspoonItalian seasoning or 2 sprigs fresh thyme, 6-7 basil leaves, and oregano
Salt
Olive oil

Wash and chop the tomatoes and onion, then place them in a salad bowl. Add the corn and halved (or smaller) olives.

Add olive oil, salt, and your choice of herbs. (I used fresh herbs from my pots!)

Toss everything together and enjoy your salad as a light dinner or side dish!
