Cucumber wakame seaweed salad

Wakame seaweed has great nutrients, so I like to add it in my cucumber salads! If you don’t have the koji, you can substitute with a little bit of miso and soy sauce.

Wakame seaweed has great nutrients, so I like to add it in my cucumber salads! If you don’t have the koji, you can substitute with a little bit of miso and soy sauce.
Steps

Wash and slice the cucumbers thinly. If using a mandolin, be careful of your fingers!

Rehydrate the wakame with some water. After a few minutes, they’ll expand in size.

In a bowl, combine all of the ingredients and mix. Taste and adjust seasoning as necessary.

Store in the fridge for up to a week. Enjoy :)
