First, boil the potatoes and beetroot in a pressure cooker for 3 to 4 whistles. Let them cool slightly, then peel the potatoes and place them in a bowl.

Peel the beetroot and grate it. Coarsely grind the boiled chickpeas and kidney beans in a blender or food processor.

In a large bowl, mash the potatoes. Add the ground chickpeas and kidney beans, all the spices, rice flour, and cornstarch. Mix everything well to form a dough.

Shape the mixture into balls and flatten them into patties. Heat a nonstick pan, add butter, and cook the tikkis on both sides until golden and crispy.
