Ingredients

45 -50minutes
4-5 people
  1. 1/2 cupfinely chopped cauliflower
  2. 1carrot 🥕finely chopped
  3. 50 gmstofu grated
  4. 1boiled & mashed potato 🥔
  5. 1onion 🧅 chopped
  6. 2strings spring onion chopped
  7. 1-1/2 tbspchopped ginger 🫚 garlic 🧄 & green chili chopped
  8. 1/4 cupcrushed corn 🌽 nibbles
  9. 1 tbspcoriander stems chopped
  10. 2-3 tbspchopped coriander
  11. 3 tbspmawa
  12. 1/2lemon 🍋 juice
  13. 3 tbspSattu powder
  14. Salt to taste
  15. 1 tspred chili powder
  16. 1/4 tsphaldi powder
  17. 1 tspcoriander powder
  18. 1/2 tspjeera powder
  19. 1/2 tspgaram masala
  20. 1/2 tspchat masala
  21. 2-3 tbspghee / oil for roasting kebabs (I use ghee because it’s enhanced the flavor)
  22. For tortillas …
  23. 3/4 cupjowar flour
  24. 1/4 cup Sattu flour

Steps

45 -50minutes
  1. 1

    In a pan boil 1 cup water with little salt & 1/2 tsp ghee when it boils switch off gas & add both flour mix it & cover for 10 min. After 10 minutes remove the flour in a bowl knead it nicely make equal size balls & make tortillas. Store in a container

    In a big bowl add all veggies + mawa + spices + Sattu flour + lemon 🍋 juice mix it nicely & correct the seasoning if required

    Divide the dough into equal portions, shape them into kebabs on skewers or cylinder-shape and keep aside.

    Do not make them too fat else they won’t cook from inside.

    Heat your grill pan with 1 tbsp ghee. If you doing on stove top keep the flame slow to medium. Brush them with ghee & roast.

    While roasting when you flip be careful it’s very soft. Roast both side & remove in a plate.

    Make garlicky yogurt dip by mixing.. Greek yogurt + crushed garlic +chili flakes + salt & pepper powder + chopped coriander &1/4 tsp brown sugar mix all & dip is ready

  10. 10

    Now take plate 🍽️ serve hot veg seekh kabab with coriander mint chutney, onion masala, yogurt dip & tortillas or you can serve without tortillas also
