  1. Ingredients to marinate the chicken
  2. 6chicken thighs
  3. 2garlic cloves
  4. 1 teaspoonchopped fresh rosemary leaves
  5. 1 teaspoonchopped fresh oregano
  6. 1 tablespoonchopped parsley
  7. 1/2 teaspoonsea salt
  8. 1/4 teaspoonground black pepper
  9. 1 teaspoonpaprika
  10. other ingredients
  11. 1/4 cupvegetable oil (60 ml)
  12. 1 cupred bell pepper, cut into strips (about 150 grams)
  13. 1 cupred onion, sliced (about 120 grams)
  14. 1 cupcelery, sliced (about 100 grams)
  15. 1 1/4 cupscarrots, thinly sliced (about 150 grams)
  16. 1/4 cupgreen bell pepper, cut into strips (about 35 grams)
  17. 1bay leaf
  18. 1 cupapple cider vinegar (240 ml)
  19. 1 cupwhite wine (240 ml)
  20. 1 cupchicken broth or water with 1/2 chicken bouillon cube (240 ml)

Prep: 40 min. Cook: 30 min.
  1. 1

    Trim excess skin from the chicken thighs. Remove any fat and the vein near the bone. Pat the chicken thighs dry with paper towels.

    Place the marinade spices in a mortar and crush into a paste. Season the chicken with the marinade.

    In a large skillet, heat the oil over medium heat. Brown the chicken thighs on both sides, then set aside.

    In the same oil, sauté the onion and garlic for a few seconds, then add the vegetables and the remaining ingredients.

    Place the chicken on top, bring the liquid to a boil, cover, reduce the heat, and cook the chicken for 15 minutes on each side.

    Serve the chicken with the vegetables and sauce. You can serve it cold if you like.
