Steps

Take rice flour, idli rawa & semolina in a bowl. Add curds, green chilli - ginger paste & coriander. Mix.

Cover & keep the batter aside for 10 minutes. Set the consistency by adding water.

Now make Panki on a non - stick pan with the help of ghee. Cook both the sides till golden.

Take it on a plate & smear ghee on top. Serve hot with a dollop of ghee on top & any Gujarati pickle of your choice.

Note : If making a JAIN VERSION, use dried green chilli powder, dried coriander powder, dried curry leaves & warm curds. Use boiled & cooled water only. Serve with Peanut Chutney as coriander Chutney is not allowed during Paryushan (Jain Festival) or any Gujarati pickle of your choice.
